Shiitake Mushrooms (Lentinus Edodes)

The noble Shiitake mushroom is known as the "King of Mushrooms". It has been prized in the Orient for over 2000 years as both a delicious food and as a medicinal treatment for vascular deficiencies. It is known and grown throughout China, Japan and Korea where it is a dietary staple, and now also grown in Huntsville, Ontario.

We started production in 2008, and are following the original labour intensive way of production.  We grow Shiitake on oak logs, outdoors, as opposed to the quick way of production on sawdust blocks, indoors.

We purchase our spawn from a certified organic facility.  We are in the process of obtaining our Organic Certification.

Growing Shiitake the way we do is totally dependent on the climate and weather.  Too much or too little rain can affect fruiting.  We added more logs this spring and hope to triple our production.
